Purslane combines the freshest, sustainably caught seafood from British waters with the best local produce the Cotswolds has to offer, with chef, Gareth Fulford, using modern techniques such as sous vide cooking to bring out the purest flavours while delivering simple dishes to a high standard. The menu changes each month to use the best seasonal fish, meat and vegetables when they are at their freshest.

Situated on a quiet Regency street in the centre of Cheltenham, Purslane is just a short walk from the High Street towards the town hall. It seats just 34 people in an intimate and friendly atmosphere, with contemporary but calming grey and yellow decor.

Recently awarded a rating of five in The Good Food Guide 2014, Purslane also won the Cotswold Life 'Newcomer of the Year Award' in 2013 while Gareth was one of three people shortlisted as 'Best Chef'.

Food critic, Jay Rayner, wrote in The Observer that Purslane is '... just bloody lovely. ... you push away a plate licked back to the glaze with a sense of loss that it's all gone'.

'A parsnip puree is ... piped atop a little pot of long-braised pig cheek which arrives alongside a crisp loin, some braised red cabbage and whole roast parsnips. A sensitively cooked fillet of sea bream, with a little crunchy greenery and a delicate mussel stew, arrives with the lightest of sponges flavoured with celery. ... It's clever, but not a cleverness that intrudes.' For dessert, '... a warm chocolate pudding with a scoop of malted milk ice cream and, on the side, a hot toffee doughnut. Which of those last three words did not meet with your approval?'

While vegetarians and carnivores will always find delicious dishes to their tastes, the menu is mainly seafood-led, using fish sourced from small, inshore day-boat fishermen who land their fish on the same day it's caught, so it can be fresh on your plate the very next day.

Gareth and restaurant manager Stephanie Ronssin come from award-winning backgrounds, where they have welcomed royalty, celebrity diners and foodies from far and wide. Between them they bring beautiful dishes to the heart of Cheltenham paired with wines from well-known names such as Louis Latour and small independent vineyards, available by the bottle, carafe or glass.
