If a dining experience is to be awarded a Michelin star, it has to be something pretty special. If the bestowal of two Michelin stars is appropriate, then diners can expect the stuff of gastronomic dreams. Whatley Manor offers such an experience; it's the kind normally reserved for fantasy. The lengthy drive, flanked by 12 acres of superbly kept gardens, leads to a spectacular manor house, which holds the luxury of the Aquarias Spa, a boardroom, a 40-seat cinema, 23 stunning individually designed bedrooms, the informal brasserie, Le Mazot, and award-winning restaurant, The Dining Room.

The Dining Room is the stage for head chef Martin Burge's culinary wizardry to be performed. Since the hotel's 2003 opening, Martin has led Whatley Manor to not only two Michelin stars, but numerous other prestigious accolades, including four AA rosettes and his own 'Grand Chef' title from Relais & Chateaux. Menus reflect the fastidious approach that Martin takes for sourcing only the finest ingredients. The seven-course tasting menu (£110) is a flowing symphony of flavour and texture, while the a la carte menu is balanced in all its delicious elements. With opening and closing chapters of amuse-bouches and handmade petits fours, the current à la carte menu holds such dishes as quail breasts, pan fried and dressed with its legs boned and farced, served with Morteau sausage, sage and onion puree and deep-fried quail eggs rolled in chicken crumb. Pan-fried fillet of turbot served with oyster and lime cannelloni, compressed cucumber and Champagne caviar sauce exemplifies Martin's innovative French style and extensive knowledge. Exquisite pre-desserts prepare you for a finale of such delights as the 'taste of tropical fruits' with banana pannacotta, coconut ice cream and passion fruit curd. Whatley Manor's sommelier introduces a meticulously sourced wine list featuring wines from around the world.
